Rod-fished bonito in Ainan Town, the place that boasts the biggest fish hauls in Shikoku

Ainan Fishing Port holds auctions in a unique style, with bidding held twice daily at 6 a.m. and 3 p.m. Bonito caught on the day are landed for the afternoon auction, and of them, only those fish that have cleared the strictest conditions for freshness are given the label “Ainan biya-biya katsuo” (Ainan bonito sold on the day it was caught). The red, chewable meat is delicious served as sashimi.
